ADF+Enderun World Class Culinary Education

I’ve always wanted to take culinary classes.  However, budget and time are setting me back.  So I was really glad that I got invited to experience a cooking demo by ADF+Enderun Chef Marc Chalopin at the Enderun Colleges.

I was excited to go the McKinley Hill where Enderun Colleges is located.  The building structures really looked so awesome.

The interiors looked so beautiful too!  Students are surely proud considering the topnotch education they are getting coupled with the beautiful learning environment they are in.

ADF+Enderun Roch and Kat

Aside from classrooms, laboratory rooms and demonstration rooms, Enderun Colleges also ran a restaurant called Restaurant 101.  Restaurant 101 features the menu created by Enderun’s culinary faculty.  It is available for  lunch and dinner every mondays to saturdays.  Restaurant 101 signature dishes include: Salmon Fillet, Mi-cuit, with Caper Herb Dressing and Warm Potato Salad; Lemongrass-scented Shrimp Broth Soup, with Crisp Vegetables; Chilled Tomato Soup with Basil Granité; Pompano Fillets a la Nicoise, with Tomato Fondue and Virgin Olive Oil Emulsion; Fillet of Sea Bass, Clams, Baby Squid, Shellfish, in Butter Sauce; Chicken Basquaise, with Stewed Sweet Peppers and Bayonne Ham; and Stewed Tagaytay Vegetables, with Vanilla Barigoule and Coriander.

It’s nice that there was a wedding reception happening when we visited Restaurant 101.  We were totally in awe with the design and the beauty of the 240 square meter Atrium.  It has high ceiling too!

If it weren’t raining that afternoon, they could have taken the outside area too.  I’ll surely keep this venue in mind as it’s such a beautiful place to hold private parties!

ADF+Enderun Wedding Reception

After seeing the beautiful facilities of Enderun Colleges, I was already imagining myself studying there.  I know it’s a bit impossible right now considering I don’t have the resources to do it yet.  But for you my readers, I want to share the information as it’s really great if you’re interested in getting international culinary training.  You’ll never know, you might be the chef of a high-class hotel or restaurant in the future!

Back in 2007, Alain Ducasse Foundation (ADF) formed an academic partnership with Enderun Colleges in the Philippines.  It’s called ADF+Enderun.  ADF was established by Alain Ducasse, one of the most celebrated modern French chefs.  He’s one of the rare ones who run restaurants carrying three-star ratings in Le Louis XV in Monte Carlo, Alain Ducasse au Plaza Athenee in Paris and Alain Ducasse at the Dorchester in London.  ADF compiles all Alain Ducasse’s culinary methods and provides training and consultancy services to the world.

With this partnership between ADF and Enderun, students are given opportunities to take their internships in ADF training centers and in noted Alain Ducasse restaurants worldwide.  Chefs from Alain Ducasse Foundation have regularly visited Enderun Colleges to train its Culinary Arts faculty to ensure that the College’s Culinary Arts education is aligned with the ADF.  Cool isn’t it?

We were able to experience partially what ADF+Enderun students are going through.  With the 1.5 hour demo, I noticed the ADF+Enderun philosophy in action.

The culinary amphitheater is the venue for lectures and cooking demo.  We were first introduced with a video and presentation of what ADF+Enderun is all about.  All of us were seated comfortably with available mini table for jotting down notes.

After the presentation, French Chef Marc Chalopin was introduced to us.  Chef Chalopin was handpicked by Alain Ducasse Foundation to maintain the standards of Alain Ducasse and ensure that the philosophy, culinary principles and techniques are properly transmitted to students.

I was really glad that he was there to provide a cooking demo for us.  It’s such an honor!

I love the facilities of Enderun colleges.  No matter if you sit in front or at the back, you get full view of what the chef is doing.  The screens show the cooking in detail plus there’s a big mirror at the back of the kitchen so we get to see clearly what’s happening.

The best part is to be able to test the chef’s creations.  Don’t worry.  I’ll share the recipes of the two delicious dishes presented to us yesterday.  They’ll be in my next post 🙂

  • Practice

The next part is for the students to practice what they learned.  I wish we could experience that too but I know it’s hard to do especially with more than 20 of us bloggers invited for the cooking demo.

What’s really nice with Enderun is that only two students share one workstation.  That means the students get to really practice what they learned in the demo class.  There’s also a maximum number of 16 students per class.

ADF+Enderun Internship

We saw the postcards with students posing with the chef in the company they are serving internship in.  Internship is really a great venue for students to apply the knowledge they acquired throughout his/her training.

The full-time program covers the various fields of culinary arts in 15 months including an opportunity for an internship in France.

Rockwell’s Ultimate Taste Test

I was hesitant at first when I got invited to attend the Ultimate Taste Test at Rockwell Tent.  I remember the first time I tried it at Eastwood wherein it was a mess.  It was like 4-6 years ago but it was just too traumatic that I didn’t attempt to attend the next ones.  However, I decided to try it again this year because several of my colleagues are going.  I don’t want to miss the chance to bond with them.

Oh, it was surprising indeed!  When I entered the venue, it was a different aura altogether.  It was pretty obvious that it was well-organized!  I didn’t even experience any difficulty getting samples from each of the merchants!  The Ultimate Taste Test was exclusive to 1,000 foodies and there were 55 merchants who participated in the event.  Tickets for Rockwell’s Ultimate Taste Test were sold at Php 585.00 per person.  I was happy that I attended!  It was a great foodie experience!  😀  The organizers got it right this time at their 6th year!  Ultimate Taste Test 6.0 was a success!  Congratulations to the organizing team!

You might be wondering what Ultimate Taste Test is.  It’s basically a yearly event wherein we can be food critics for a day by sampling food products from different participating merchants.  You better come to an Ultimate Taste Test (UTT) event in an empty stomach.  If you missed this year’s event, don’t fret as you still have next year.  I’m sure UTT will be here to stay.

So how does it work?

We are given a Passport as we register for the event.  Using the Passport, we get to rate the food on a scale of 1 to 5, 5 being the highest.  We can also share our feedback to the food supplier.

Tips on how to enjoy Rockwell’s Ultimate Taste Test:

  1. Taste and Savor each food.
  2. Hold on to the score sheet.  Go and taste one dish at a time then Rate the food you just tasted.  Include more descriptive comments.
  3. Recycle your plastic water cups.
  4. Clean as you go, there are waste bins around the area.
  5. Submit the form at the exit.

Aside from the awesome food, we also got to experience great entertainment in Rockwell’s Ultimate Taste Test event.  There were bands that played music but the highlight for us was the belly dancing group by Jill.  They were dressed in beautiful belly dancing costumes.  They also invited some guests to dance with them on stage!  Two of my colleagues were there!  Too cute!

Eat my GF specializes on Garlic Fries with toppings as well as virgin chips.  This was the first booth I visited but the flavors of the chips and fries were just too rich that I couldn’t forget how tasty they were.  I love the supplier’s tagline as well: “Don’t cheat on your GF… stay loyal…”.  Hahaha!  Double meaning FTW!

  • Almost Gourmet Food Service

Their Frost Bites cook it yourself offering is a winner!  Each pack includes the sauce already.  All we have to do is fry or bake the meat and we’re good to go.  Yummy!

  • The Flying Chef

Their ham & cheese and chocolate & bacon empanadas were so delicious!  However, for the chocolate & bacon empanada, the chocolate overpowered the flavors of the bacon.  Will it bother you though?  I’m sure it won’t as most of you love chocolates!

  • HKR Food Express

Thanks to Rockwell’s Ultimate Taste Test as I got to experience the food being offered at Hongkong Roast Food Express.  This shall be my best discovery in the event.  Now, I have another good option for our daily lunch!  HKR Food Express’ Roast Chicken and Asado were so good!  I couldn’t get enough of the food!  I shall ensure to order their asado for lunch next week!  Good thing, they are located in Makati City.

Who would ever thought that Aga Muhlach’s son can cook delicious food?  Luigi Muhlach’s creations: Chicken Cordon Bleu and Phillychanga will surely be in everyone’s favorites list.  I have no doubt.  They even ran out of pamphlets and cards considering it was only 4:45pm when I asked for it.

  • Dek A Thai Authentic Cuisine

I surely think the food was authentic as the person manning the booth was from Thailand.  I enjoyed the Cha Yen/Thai traditional iced milk tea being served as well as the Poh Pia Tod/Spring rolls and vegetable salad.  I just love Thai food!

  • Farm N’ Deli

I loved each and every kind of food I tasted in the Farm N. Deli booth.  The Tinapa spread was delish, yum!  I also find it interesting that they offer ALL kinds of longaniza in the Philippines!  I never even thought that we have like 11 kinds of longaniza based on its location in the country.

I love munching on things whenever I work.  I was able to taste the chicharon as my colleague had it in our table.  As soon as I tasted it, I knew I had to look for the stall that has it.  Fortunately, I was able to find it.  The supplier is apparently, PinakBEST.  They have a stall in Mercato Centrale.  The chichacorn is being sold at Php 120 for a big pack.  So delicious!

  • Mang Pedro Food Products

It’s a good thing that the supplier wasn’t that strict as I had to have multiply servings of their taho.  Gosh, their almond flavored taho was definitely the best taho I have ever tasted so far.  I highly recommend Mang Petro Food Products for your taho needs.  If I’m to rank my favorites, this will be number 1 🙂

  • Merry Moo Artisan Ice Cream

Merry Moo uses fresh local dairy in making their ice cream.  Among the flavors that I tasted, the berry corny was my favorite!  Those homemade ice cream has unique flavors and I’m sure you would want to have more.

  • Chef’s Table

I wasn’t surprised that I saw Chef Bruce Lim’s famous creation in UTT 6.0.  His buko pie martini is a must-try.  I remember raving about this when I visited Chef’s Table for the first time.

Whew!  Spent 4 hours trying to taste food and rating it in Rockwell’s Ultimate Taste Test.  A great way to experience food with fellow foodies.  Will we do it again?  Oh, I’m sure!

It has been less than a year since Mercato Centrale launched.  I was there during the first day to experience the newest food haven at Bonifacio Global City that time.  I went home with tons of food from the weekend market.

However, Mercato Centrale is far away from my place.  As much as I want to go back often, it’s just a bit inconvenient for me.  So when I was informed that Mercato Centrale now offers food delivery, I was ecstatic!

It’s fortunate that I was given a chance to try out Mercato Centrale Delivery.  Apparently, their chosen partner is City Delivery!  I actually tried it out recently and I was very pleased with the service.

As I shared in my previous postCity Delivery is a multi-restaurant delivery service covering Metro Manila, Philippines that specializes in food and beverage delivery.  The delivery service promises to bring us the city’s best restaurants and more to our doorsteps.  All this can be done by just a dial or click away.

Mercato Centrale joins City Delivery through their Foodie Delivery.  Foodie Delivery is the delivery service for Home-Based Food Merchants.  It’s actually a first in the Philippines.  The idea started during the Ultimate Taste Test event organized by OAP founder Anton Diaz wherein he realized that unique food finds are home-based.  In order to avail those products, we either pick it up at the seller’s house or ask our friends to buy for us.  Anton’s OAP doesn’t have the means to provide delivery service so he partnered with City delivery to turn this awesome idea into reality.

With Foodie delivery, we can also enjoy home-based specialties with just a click (www.citydelivery.ph) or a call (87878) away.

Mercato Centrale is a haven for foodies as we have the best of the best home-based merchants in one marketplace.  I’m really glad that they finally joined the bandwagon through City Delivery’s Foodie Delivery.

Currently, there are eight merchants from Mercato Centrale that are participating in the new Mercato Centrale Delivery.  Who would have thought that this is possible?  I honestly didn’t think so!

These are some of the merchants from the weekend bazaar where we can order their specialties with just a click or dial away:

  • Bale Dutung – a popular food destination in Pampanga by Chef Claude Tayug.  Specialties include Pan de Bagnet and Lechon Tortilla.
  • Big Bob’s Charcoal Grilled Burgers – offers charcoal grilled patties stuffed with mozzarella and cheddar cheeses.  There are two ices available: the regular Big Bob’s burger and the Big Bob’s super special which has two 1/3 pound beef patties.
  • Chuck’s Grubberie – their perfectly crisp, light better, skin-on potato wedges and various dips that help made them famous in fish and chips.  Their bestseller is the original beer battered dory fish & chips but they also offer other types of fish like the red snapper, magi-mahi, and orange roughy.
  • Homemade Ravioli – sells a variety of flavors of ravioli.  Their specialty is the spinach cream ravioli with fresh tomato and salsa.  The mild flavor of ravioli is perfectly complemented by the tomatoes and other herbs.  Other flavors include roasted squash, three cheese, blue cheese & pear, salmon dill, shitake pecorino, and eggplant parmigiana.
  • Manang’s Chicken – sells double deep fried crispy chicken with Manang’s secret soy garlic sauce.  There are three sauces to choose from: original, mild spicy, and extra spicy sauce.  You can eat the chicken with rice, macaroni salad or on its own.
  • Merry Moo – homemade ice cream.  They source their ingredients from local dairy farmers and they make sure that the ice cream is always fresh.  Merry Moo is best known for its unique and creative ice cream flavors namely honey & pili nuts, apple cinnamon, rum and raisin, french vanilla, aztec chocolate, strawberry basil, and their bestselling flavors sea salt caramel and earl grey tea.
  • Mochiko – Japanese confection made of glutinous rice flour or mochiko.  They offer various flavors like vanilla, chocolate, strawberry, caramel, green tea, black sesame, and their bestseller, azuki (red bean).
  • Spring by Ha Yuan – Ha Yuan has been famous since 1956 because of its hearty chinese dishes.  Now, they have introduced Spring by Ha Yuan which offers light-hearted, health-friendly, Asian-inspired nibbles.

Ha Yuan is actually one of my childhood favorites.  I always dine at Ha Yuan when I was in elementary school.  I’ve been so addicted with their fresh lumpia so when I saw the package sent to me by Mercato Centrale Delivery, I was so happy!

I was given three of Spring’s bestsellers.  I enjoyed eating each one of them especially my favorite, fresh lumpia.

  • Fresh Amoy Lumpia (Php 60)

Eating this lumpia felt like I travelled back in time.  This was the same delicious vegetable lumpia I had been eating when I was a kid.  The all vegetable filling of tofu and assorted veggies made the dish so healthy.  I wish they have sent me more.  I guess I’ll have to include the fresh amoy lumpia from Spring the next time I call City Delivery.

  • KaPao! (Php 70)

I haven’t heard of KaPao but I was glad I was able to try it out.  It’s actually a famous delicacy in Singapore.  KaPao is made of crispy floss and chinese sausage.  Every bite of this special sandwich was just heavenly.  A must order in Spring!

  • Hongkong Style Egg Tart (Php 35)

There are 4 different flavors available: custard, coffee, pandan and milky no yolk.  Spring’s Hongkong Style Egg Tart can also be ordered in box of 4s (Php 130).  A definite sweet dessert but delicious!  It was creamy too and full of yummy sweet flavors.

We all know that Mercato Centrale opens only on weekends.  The Mercato Centrale Delivery also operates the same way.  We can get our Mercato Centrale favorites freshly delivered between 9AM to 2PM during weekends.  However, if you insist to get the food delivery on a weekday then you have to order 2 days in advance.

This is definitely great news for Mercato Centrale fans!  Aren’t you delighted?  I surely am! 🙂

My City Delivery Experience

I usually stay home during weekends.  Food delivery is always my choice whenever I’m lazy to go out.  However, I’m used to fast food delivery.  Recently, I’ve been seeing big restaurants offering delivery too.

One time, I was a bit experimental.  Since friends came over to help me clean up my place, I decided to try out City Delivery for our food needs (both lunch and dinner).

It was my first time to try out the service so I was a bit observant.  Will we get good service?  Will we get food on time?  What kind of packaging do they have?  Will the City Delivery people show courtesy and professionalism?

City Delivery is a multi-restaurant delivery service covering Metro Manila, Philippines that specializes in food and beverage delivery.  The delivery service promises to bring us the city’s best restaurants and more to our doorsteps.

Customers can order food in two ways:

  • Online through the City Delivery Website (http://www.citydelivery.ph)

We decided to order through their hotline 87878 that day.  We were so filthy and actually don’t have any time to open up a laptop and surf in any website.  We browsed through the City Delivery booklet and was in total awe as to the number of reputable restaurants City Delivery partnered with.  As of this writing, there are 189 restaurant partners.  Wow!

We ordered from Red Kimono for lunch and  The Old Spaghetti House for dinner.

City Delivery Partners

Apparently, we can get food from our designated areas.  If the establishment we want to order from is located in a different area, the minimum order changes.  We can also opt to pay the inter-area delivery charge if we decide to stay with the original minimum order.

Here’s how it works:
Minimum Food Order
Minimum food order is at Php 500 but if you’re more than 5 kilometers away from the establishment then the minimum food order goes up to Php 1,000 or even higher if the restaurant is a bit more far away.
Inter-Area charge
If you wanna keep the minimum food order of Php 500 but wanted to order from an establishment that is more than 5 kilometers from your place, then you need to pay an inter-area charge on top of your food delivery bill.
1 city hop    – 5 to 10 km   – Makati to Greenhills      = +100 Inter-area charge
2 city hops – 10 to 15 km – Makati to Quezon City    = +150 Inter-area charge

I was surprised as to how well the call center agent communicated.  I called the first time and the girl who answered welcomed me so warmly.  She was fast, very friendly and sooo efficient!  I was asking several questions about the servings of each dish and she was quick in providing the answers I need.  She asked me to hold for a few seconds to verify with the restaurant and was very apologetic when I had to wait for less than a minute (I really didn’t mind).  She spoke very good english too!

Delivery time varies on how far the restaurant is.  Our orders from Red Kimono came after an hour and a half.  I didn’t notice it as we were busy cleaning the house.  The excellent customer service through their hotline was a refreshing one.  I was totally sold on City Delivery then.

When the delivery guy arrived, I noticed the very bright orange and green color of their uniform and motor vehicle.  He was very friendly and even allowed me to take several pictures of him.  I told him that I wanted to write about their service.  The guy said he’s used to it haha!

Another thing that impressed me with City Delivery is their food packaging.

The food were put in enclosable containers.  I really liked the presentation!  We didn’t even need to use our own dining utensils.  The food were ready to serve upon delivery.  Yummy!

We ordered Tofu Agedashi (Php 100), Chicken Teriyaki (Php 210), Wasabi Oyster Tempura (Php 225), Tonkatsu (Php 195) and Gohan (Php 40 each) from Red Kimono.  We also ordered 1.5 liter Pepsi (Php 60).  It was a good meal.  We had the comfort of eating high-end food in my own home.  How cozy! 🙂

During dinner, we opted for The Old Spaghetti House.  We called through City Delivery’s hotline again.  This time, it wasn’t as impressive but it was still good.  When I asked the call center agent for how many people a pizza from The Old Spaghetti House is, she just said that she didn’t know.  I had to ask her to call the merchant so I can get my answer.  She didn’t hesitate and told me she’d call me back.  After 2 minutes, I got a call back from the agent and everything went smoothly after.  I appreciate how City Delivery trains their call center agents.  With that kind of customer service, I’m pretty sure City Delivery is here to stay.

While I was super impressed with City Delivery’s call center agents, I was a bit disappointed with the guy that delivered our food for dinner.  He was busy chatting on the phone and didn’t mind us when we opened the door to get our orders.  He continued chatting with someone on the phone while giving us our orders.  He also didn’t have exact change even if I specifically mentioned how much I’m giving them.

Some parts of the pizza were dislocated but we totally understand why.  Anyway, it’s just a small feedback that I’m sure will be acted upon when City Delivery people see this post.  Looking at how passionate they are with their business, I’m sure they’ll work on it.

We ordered Golden Onion Rings (Php 110), Fried Mozzarella Sticks (Php 130), California Maki Pizza (Php 255), Double Cheeseburger (Php 250) and Philly Cheese Steak (Php 255).

I’m glad that I finally tried out City Delivery.  It’s definitely good that we are getting high quality service from them.  I really hope they do get partners that are near my place.  There wasn’t even a single restaurant in their partners list that are 5 kilometers away from my place.  Since I live alone, I can’t afford to always spend Php 1,000 on a single meal 🙁

However, if I do crave for good food and I have friends over, I’ll surely consider City Delivery Food Service.  My 2 experiences that day were both pleasant and I’ll surely recommend this to friends.  You see, City Delivery even sell poker chips (Php 360) and bicycle playing cards (Php 150), perfect for house party with friends.

2nd Visit to Ba Noi’s

Oh, the wonders of blogging!  Some of you may think that I’m earning from this blog but I don’t.  I don’t have any idea about SEO which professional bloggers are very familiar with.

I may not earn financially from HeaRty’s Haven but I do feel rewarded from the comments you readers leave here, as well as the emails I’ve been receiving from you 🙂

Last week, I received an email from Ba Noi’s general manager as they stumbled upon my post.  They invited me to go back and try their other dishes.  Actually, without even receiving that email, I know that I’d definitely go back to Ba Noi’s because of their delicious food.  It really felt good that the establishment found my post through internet and was appreciative of my feedback.  This is just one of the reasons why I love blogging!

For a change, I went on a lunch time.  I thought that since it was a saturday, I wouldn’t have a hard time looking for parking.  I was right!  Whew!

So here are the dishes I ordered (you may wanna check out their other specialty dishes from my earlier post):

  • Fresh Spring Rolls (Php 165)

Last time we visited, we had fried spring rolls.  This time around, we ordered fresh spring rolls.  It was different definitely.  The fresh spring rolls was a bit healthier considering that it wasn’t fried.  It was served with peanut sauce compared to fish sauce.  The fresh spring rolls is best eaten with the hands, you just have to get one and dip into the sauce.  I liked this and I believe a lot of people order this more than the fried version.  I, however, prefer Ba Noi’s fried spring rolls!  It was super delish!

  • Fresh Sugarcane Juice (Php 90)

I cannot get enough of Sugarcane!  This was still my order.  Since we didn’t get their promo, I finally got a bigger serving of sugarcane juice!  Whee!  It was really, really good!

  • Sauteed Meat & Vegetables in Crispy Egg Noodles (Php 210)

I tried out their beef noodle soup the last time so I wanted to try out their fried noodles for a change.  When the dish was served to us, it was eyecandy.  I was taking pictures of it for a short while trying to get the best angle of it.  I immediately asked my friend to take out all the liver in the dish as I dislike eating those.  Other than the liver, this dish was good.  Sauce was just right, there were enough meat & vegetables in it too.  I don’t feel much difference of this crispy noodles with the Chinese version though.

  • Grilled Lemongrass Beef Fillets (Php 295)

All I can say with Ba Noi’s grilled lemongrass beef is WOW!  Just seeing the dish was already mouth-watering then having a bite of it just made it a whole lot better!  The beef was tender, full of flavor and the way it was presented was cool too!  The way to divulge a taste of this wonderful dish is to wrap the beef with lettuce and dip it into the sauce.  A must-order!

  • Vietnamese Iced Coffee (Php 95)

My friend Christina ordered cold Vietnamese coffee for her drink.  It was served with condensed milk on the side.  I then remembered that Ba Noi’s do have a mini-tutorial on how to enjoy their dishes.  I find it odd that they don’t display it on their tables.  I had to ask for it.  I urge you to do the same.  It was definitely a joy looking at the instructions.  You get to learn a thing or two as well.

It was so nice seeing both visual and written instructions on the tutorial.  You can be sure that you are making the most out of your visit in Ba Noi’s.  If you still encounter difficulty, fret not!  Because Ba Noi’s servers are always ready to serve you.  Like for the case of my friend, it was actually one of the servers who helped her pour the coffee mixture into her glass.

In spite of the location of Ba Noi’s Vietnamese restaurant, there were still a lot of customers during the time when we were there.  Imagine, at 1:45PM, the restaurant was filled with customers still!  That proves how successful their place is.  I still hope they’ll expand and open some branches inside the malls.  I wouldn’t mind going back there again.
