Recipe: Ginisang Upo at Hipon

As much as possible, I try to cook dishes that are pinoy in nature because it’ll be very easy to find the ingredients here in Manila. Another deliberate choice is to cook mainly vegetable dishes with meat incorporated. The reason for this is that I get to eat healthy and at the same time, get the protein fix that I needed.
For today, the recipe that I followed is Ginisang Upo at Hipon. In english, this is stir-fried gourd with shrimps.
Ginisang Upo at Hipon

Ingredients
- 2 pieces upo or gourd, peeled & cut into 1 inch cubes
- 1 piece tomato, chopped
- 1 onion, chopped
- 5 cloves garlic, minced
- 1/4 kilo shrimps (keep heads for shrimp juice)
- 1/2 cup shrimp juice
- 1 tablespoon olive oil
- 1 tablespoon fish sauce
- salt and pepper to taste

- 1/2 cup water
- heads from peeled shrimp
Instructions
- [Shrimp Juice]
- Keep heads after peeling and deveining shrimps.
- In a bowl, combine 1/2 cup water and shrimp heads.
- Mash heads in the water to extract the juice.
- Remove the heads from the mixture and set aside.
- [Main Recipe]
- In a wok, heat oil over medium heat.
- Add onions and garlic and cook until aromatic.
- Add tomatoes and mash it, cook until softened.
- Add fish sauce and cook for another 2 minutes.
- Add peeled shrimps and cook until shrimps change color (do not overcook).
- Add upo/gourd and combine with the rest of the ingredients.
- Add shrimp juice and bring it to boil.
- Season with salt and pepper to taste.
- Continue to cook for another 5 minutes before serving.
