Recipe: Scallion Ginger Beef & Tofu

In my quest to find more recipes for tofu, I found one that includes beef. The woks of life has this simple recipe called Scallion Ginger Beef and Tofu. I actually liked the end result because it was very flavourful.
The only thing that we have to be careful of is the choice of meat. I bought a flank steak for this recipe but I got it from a not so good supplier in a supermarket. I will be more choiceful next time especially when buying meat and fresh produce.
The Scallion Ginger Beef & Tofu is a chinese recipe that is a complement to plain rice. I’ll cook this next time when I have people over at my home so they can sample it, hehe!
Scallion Ginger Beef & Tofu

Ingredients
- 2 bunches leeks, cut into 2.5-inch pieces
- 1/2 package of firm tofu, drained & cut into 1/2 inch slices
- 1 red bell pepper, sliced into thin strips
- 2 tablespoons olive oil
- 7 slices ginger
- [Marinade]
- 8 oz flank steak, sliced into 3-inch strips
- 1 teaspoon oil
- 1 teaspoon cornstarch
- 1/4 teaspoon baking soda
- [Sauce]
- 1 tablespoon Shoaling wine
- 1/2 teaspoon hoisin sauce
- 1/4 teaspoon sesame oil
- 1 tablespoon & 1 teaspoon soy sauce
Instructions
- Marinate beef with oil, cornstarch and baking soda. Set aside.
- Mix shoaling wine, hoisin sauce, sesame oil & soy sauce in a bowl. Set aside.
- Heat a wok on high heat and add olive oil.
- Sear the marinated flank steak on both sides. Set aside.
- Stir fry tofu for a few minutes. Set aside.
- Using the same wok, add olive oil and ginger.
- Add leeks and red pepper. Stir fry for 1 minute.
- Add beef. Stif fry for another 1 minute.
- Add tofu and sauce mixture.
- Combine all ingredients and cook for 2-3 minutes.
- Serve and enjoy!
