Recipe: Three Cup Chicken

I was preparing for my second housewarming party which has a Chinese theme. I’m very much worried to fail so I did a trial a day before of the main dish -> Three Cup Chicken.
Luckily, even the trial was a success. Because of that, I became more confident in serving the dish to my guests 🙂
I initially thought that cooking Three Cup Chicken is difficult but apparently, we can cook one in just 30 minutes. It was really yummy and I intend to cook this more!
Three Cup Chicken

Ingredients
- 2 chicken leg quarters, cut it into small pieces
- 2 cups fresh basil leaves
- 2 tablespoons rice wine or mirin
- 2 tablespoons soy sauce
- 1 teaspoon brown sugar
- 1 tablespoon sesame oil
- 5 garlic cloves, sliced
- 1 thumb ginger, sliced
- 3 green onions
Instructions
- Cook chicken in boiling water for 2 minutes and remove impurities.
- Drain chicken and set aside.
- Heat a pan over medium heat.
- Add sesame oil, garlic, ginger and green onions.
- Add chicken, rice wine, soy sauce and brown sugar.
- Cover the pan with lid and simmer for 20 minutes over medium heat.
- Add basil leaves.
- Increase heat to high until sauce is thick.
- Serve and enjoy!
