Recipe: Adobong Kangkong

Adobong Kangkong Recipe

After cooking several Korean dishes, it’s time to go back to Filipino dishes.  I was advised by the doctors to really start eating healthy.  So I’m back to cooking more vegetable dishes. 

First up, Adobong Kangkong.  One of my favorite Filipino recipe blogs is Kawaling Pinoy.  I think most of the recipes that I follow is from that site.  Like this Adobong Kangkong recipe for example, I really liked the taste and I must say, I thoroughly enjoyed eating this dish.

Ingredients
  1. 1 bundle kangkong, cut into 1/2-inch lengths & stalk ends discarded.
  2. 1 tablespoon olive oil
  3. 1 onion, minced
  4. 7 cloves garlic, minced
  5. ½ pound pork belly, cut into strips
  6. ½ cup vinegar
  7. ¼ cup soy sauce
  8. ½ cup water
  9. pepper to taste
Instructions
  1. In a wok over high heat, heat oil.
  2. Add onions and garlic, cook & stir regularly.
  3. Add pork and cook until browned.
  4. Add vinegar and bring to a boil. Continue to cook without stirring for 3 minutes.
  5. Add soy sauce and water. Bring to a boil for 2 minutes.
  6. Lower heat, cover and cook for 10 minutes or until pork is tender and sauce is reduced.
  7. Season with pepper to taste.
  8. Increase heat to high.
  9. Add kangkong and cook, stirring regularly until changing is covered with sauce for about 3 minutes.
  10. Remove from heat and serve with fried garlic bits.
  11. Serve and enjoy!
