Recipe: Ampalaya Guisado

I remember having tomato sauce at home and couldn’t think of anything to use it with. So that day, I searched through Del Monte website to look for ideas. I found this new recipe I haven’t tried — Ampalaya Guisado. The usual stir-fried ampalaya that I know is with eggs but apparently, there is one version that uses salted beans and tomato sauce.
This Ampalaya Guisado is a different take of the usual but I liked it! If you’re looking for a new way to use ampalaya, this recipe is for you 🙂
Ampalaya Guisado

Ingredients
- 5 cloves garlic, minced
- 2 pieces onion, peeled & chopped
- 200 grams ground pork
- 2 pieces ampalaya, cleaned, quartered & seeds removed
- 180 grams tokwa, cubed and fried
- 2 tablespoon salted black beans (tausi)
- 2 pieces egg, beaten
- 1 200 grams Tomato Sauce
- 3/4 cup water
Instructions
- In a wok over medium heat, add oil.
- Add garlic and onions and cook until aromatic.
- Add ground pork, cook until color turns light brown.
- Add water, tomato sauce, ampalaya and tokwa.
- Cover pan and simmer for 5 minutes.
- Add black beans and egg.
- Simmer for another 3-5 minutes.
