Recipe: Salted Eggs and Tomato Salad

Whenever I cook tuyo, I’m always reminded that I needed a side dish to go with it. That side dish is Salted Eggs and Tomato Salad.
I just love the combination of flavours with the saltiness of the eggs and the juiciness of the tomato. They taste perfectly with the rich taste of tuyo and garlic rice. It has become a habit and I couldn’t say my breakfast is complete if there’s only tuyo and rice.
Honestly, I know that this is an extremely simple recipe. But hey, if not for Panlasang Pinoy, I wouldn’t have known that we actually add fish sauce to Salted Eggs and Tomato Salad. It actually made quite a difference!
Salted Eggs and Tomato Salad

Ingredients
- 2 salted duck eggs, chopped
- 2 pieces tomatoes, chopped
- 1 teaspoon fish sauce
Instructions
- Place the chopped salted duck eggs into a bowl.
- Add the chopped tomatoes.
- Add the fish sauce.
- Mix all the ingredients and serve!
