Pork Adobo Recipe

Pork Adobo is considered the ultimate Filipino dish.  When I was young, I thought that cooking this dish is complicated.  Pork Adobo is flavourful and very much fulfilling.  Eating it with rice is a must.  

When I started my journey in cooking, I realised that cooking pork adobo is not hard after all.  Actually, this is one of the easiest Filipino dish to cook!  I cook this dish at least once every 2 months, I just can’t get enough of pork adobo!

For the marinade
  1. 1 kilo pork belly, cubed
  2. 1 medium onion, diced
  3. 1 head garlic, minced
  4. 2 pieces bay leaves
  5. 1 teaspoon salt
  6. 1/2 teaspoon pepper
For the dish
  1. 1 cup vinegar
  2. 1/2 cup soy sauce
  3. 1 cup water
  4. 1 tablespoon olive oil
  5. salt & pepper to taste
Instructions
  1. In a bowl, mix pork, garlic, onions, pepper, bay leaves and salt.
  2. Marinade for 30 minutes (In my case, I used a 9-minute marinator).
  3. In a wok over medium heat, put oil.
  4. Add meat mixture.
  5. Cook for a few minutes until meat is coloured light brown.
  6. Add vinegar and allow the mixture to boil for 5 minutes.
  7. Add soy sauce and water. Stir everything.
  8. Boil for another 5 minutes.
  9. Lower heat and cover the wok.
  10. Simmer for 1 hour. Stir a few times while on a simmer.
  11. Season with salt and pepper.
  12. Serve and enjoy!
