Recipe: Corn Dog Mini Muffins

I wanted to prepare breakfast and I had some hotdogs left in my refrigerator. There is this goal that I started this year wherein as much as possible, I would prevent myself from eating processed foods. One of the things that I wanted to take out of my diet is hotdogs as I’ve been eating so much of it almost everyday for the past x number of years.
So to bid goodbye to the super yummy hotdog, I decided to cook something special that features it. The winning recipe? A mini corn dog muffin! The Corn Dog Mini Muffins are filling to the stomach and goes very well with ketchup.
Corn Dog Mini Muffins

Ingredients
- 1 cup all purpose flour
- 1 cup yellow cornmeal
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk (1 cup water + 4 tbsps buttermilk powder)
- 1/2 cup unsalted butter
- 1/3 cup sugar
- 2 eggs
- 6 hotdogs cut into 1-inch pieces
Instructions
- Preheat oven to 375 degrees fahrenheit (190 degrees celsius).
- Lightly spray olive oil into the mini muffin pan.
- In a bowl, mix flour, cornmeal, baking soda and salt.
- In another bowl, whisk together buttermilk, butter, sugar and eggs.
- Pour wet mixture over the dry mixture.
- Mix using a spatula (do not overmix).
- Put 1 tablespoon batter into each mini muffin cup and place 1 hotdog piece in the middle.
- Bake in the oven for 8-10 minutes.
- Remove from oven and cool the mini muffins.
- Serve and enjoy.
