Bagoong Fried Rice Recipe

I’ve been eating bagoong fried rice in restaurants and been wanting to try to cook the dish on my own.  Luckily, the recipe that I found online is spot on.  I super enjoyed the taste of the dish.  The bagoong fried rice was just super yummy!  I have to take note though that the mango is a must.  The mango gave the dish character and elevated the taste of the dish.

Ingredients
  1. 5 cups rice, cooked
  2. 2 cups pork belly, sliced thinly
  3. 5 eggs, beaten
  4. 3 tablespoons bagoong/shrimp paste (I used Barrio Fiesta Bagoong)
  5. 2 pieces ripe mangoes, cubed
  6. 3-4 cloves garlic, minced
  7. sesame oil
  8. 2 tablespoons cooking oil (I used olive oil)
  9. salt & pepper to taste
Instructions
  1. Marinade pork belly in salt, pepper & sesame oil for at least 30 minutes. (On my part, since I used the 9-minute marinator, the process took much less time).
  2. In a wok, put cooking oil and scramble the eggs.
  3. Once the eggs are cooked, set aside and slice into strips.
  4. Using the same wok, fry the pork belly until cooked. Set aside.
  5. Again, using the same wok, put garlic and fry until aromatic.
  6. Add rice and bagoong.
  7. Mix well until bagoong is fully combined with rice. Fry for a few minutes.
  8. Add pork belly and scrambled eggs.
  9. season with pepper.
  10. serve in a bowl or plate topped with mangoes.
