Recipe: Bagoong Fried Rice

I’ve been eating bagoong fried rice in restaurants and been wanting to try to cook the dish on my own. Luckily, the recipe that I found online is spot on. I super enjoyed the taste of the dish. The bagoong fried rice was just super yummy! I have to take note though that the mango is a must. The mango gave the dish character and elevated the taste of the dish.
Bagoong Fried Rice

Ingredients
- 5 cups rice, cooked
- 2 cups pork belly, sliced thinly
- 5 eggs, beaten
- 3 tablespoons bagoong/shrimp paste (I used Barrio Fiesta Bagoong)
- 2 pieces ripe mangoes, cubed
- 3-4 cloves garlic, minced
- sesame oil
- 2 tablespoons cooking oil (I used olive oil)
- salt & pepper to taste
Instructions
- Marinade pork belly in salt, pepper & sesame oil for at least 30 minutes. (On my part, since I used the 9-minute marinator, the process took much less time).
- In a wok, put cooking oil and scramble the eggs.
- Once the eggs are cooked, set aside and slice into strips.
- Using the same wok, fry the pork belly until cooked. Set aside.
- Again, using the same wok, put garlic and fry until aromatic.
- Add rice and bagoong.
- Mix well until bagoong is fully combined with rice. Fry for a few minutes.
- Add pork belly and scrambled eggs.
- season with pepper.
- serve in a bowl or plate topped with mangoes.
