Almond & Matcha Green Tea Cookies

I was ecstatic when I was able to finally afford and buy the Kitchenaid Mixer I’ve been eyeing for years.

My friend and I immediately plan to do a baking day.  On that day, the chosen recipe is the Almond & Matcha Green Tea Cookies.  We shopped for a few hours trying to find all the ingredients so that it’ll be easy for us to follow the recipe.  

We had a hard time looking for the almond meal so we decided to create one of our own. It was worth it.  It’s always nice to learn new things.  The end product was nice.  I really like the taste of Matcha 🙂

Ingredients
  1. 1/2 cup butter, softened at room temperature
  2. 1/3 cup sugar
  3. 1/3 cup light brown sugar
  4. 1 egg
  5. 1 tsp vanilla extract
  6. 1 cup almond meal
  7. 1 cup all purpose flour
  8. 1/2 tsp salt
  9. 1/4 tsp baking soda
  10. 3 tbsp pure matcha green tea powder
  11. 1/3 cup whole almonds, chopped
Instructions
  1. Preheat oven to 177 degree celsius.
  2. Line baking sheets with parchment paper or silicone mat.
  3. In a stand mixer fitted with paddle, add butter, sugar & brown sugar.
  4. Cream on medium speed until fluffy for about 1 minute.
  5. With the mixer on low, gently add vanilla extract & egg.
  6. In a separate bowl, sift the rest of dry ingredients (flours, salt & baking soda).
  7. With the mixer on low, add sifted ingredients & chopped almonds. Stir until just combined. Do not over-mix cookie dough.
  8. Scoop cookie dough with an ice cream scoop onto baking sheets.
  9. Using a fork, gently press down onto cookie dough horizontally and vertically.
  10. Bake cookies for 12 minutes.
  11. Remove cookies from oven.
  12. Allow to cool on baking sheet for 5-10 minutes before cooling it off completely on cooling racks.
