Adobong Sitaw with Pork Recipe

I said to myself that I’ll start eating healthy from now on.

Being sick is just not cool and it’s too damn uncomfortable.  My doctor told me to eat more meat.  However, my mind is saying that I need to take more vegetables.  So I’m going to balance it out.

Today, I cooked adobong sitaw with pork.  As usual, I followed the recipe of one of my favourite cooking blog: Kawaling Pinoy.  The end product is so delicious!  I think I ate more than I should.  No problem though.  I already plan to include exercise in my regimen.  I do not want to stop myself enjoying yummy food.

Ingredients
  1. 1 tbsp oil
  2. 1 lb pork belly, cut into thin strips
  3. 1 onion, minced
  4. 6 cloves garlic, minced
  5. ¾ cup vinegar
  6. ¼ cup soy sauce
  7. ½ cup water
  8. 1 bunch sitaw, cut into 2-inch lengths
  9. salt and pepper to taste
  10. fried garlic bits, for garnish
Instructions
  1. In a wok over medium heat, heat oil.
  2. Add pork, stirring occasionally until browned.
  3. Add garlic & onions until aromatic.
  4. Add vinegar. Bring to a boil and without stirring for 5 minutes.
  5. Add soy sauce and water.
  6. Cover and continue to cook until pork is cooked and sauce is reduced.
  7. Add string beans and stir to combine.
  8. Cook for 5 minutes or until long beans are tender yet crisp.
  9. Season with salt and pepper to taste.
  10. Garnish with fried garlic bits.
