Kimchi Fried Rice

Ever since I stumbled upon Maanchi’s website, I couldn’t stop watching her videos.  She’s so adorable and I love how she shows her way of Korean cooking with us.

The first dish that I followed from Maangchi’s recipes is Kimchi Fried Rice.  Maangchi used freshly cooked rice in her recipe.  I used 2-days old rice which turned out great as well.  I think I’ll probably do a Korean-themed housewarming soon!

Ingredients
  1. 3 cups white rice, cooked
  2. 1 cup kimchi, chopped
  3. ¼ cup kimchi juice
  4. ¼ cup water
  5. 3 tablespoons gochujang
  6. 3 teaspoons sesame oil
  7. 1 green onion, chopped
  8. 1 tablespoon roasted sesame seeds
  9. 1 sheet of seaweed, shredded
  10. 1 teaspoon olive oil
Instructions
  1. Heat up a wok & add the oil.
  2. Add kimchi and stir fry for 1 minute.
  3. Add cooked rice, kimchi juice, water & gochujang.
  4. Mix all the ingredients together for 7-8 minutes.
  5. Add sesame oil.
  6. Transfer Kimchi Rice to your serving bowl.
  7. Sprinkle with green onion, seaweed and sesame seeds.
  8. Serve and enjoy!
