Roasted Okra Recipe

I want to eat vegetables as much as possible,.  It’s because I want to be fit and healthy especially since I’m not getting any younger.  Apart from that, I also want to try using my stove.  It has been there for almost a year and I haven’t really used it that much.  So when I stumbled upon a baked okra recipe online, I immediately took note of it.  Then I made the roasted okra as a snack one day.

Thanks to my best friend Christina for accompanying me and watching me prepare the roasted okra.  Honestly, it was very easy to cook.  However, being such a newbie, I had to spend so much time.  Of course, taking photos while doing so took some time too.

I love how the sliminess of the okra got diminished during the baking process.  Thus, making it a pretty good snack to eat.  Okra is popular as an ingredient for kare kare.  Other people boil the okra then dip it in shrimp sauce (bagoong).  If you haven’t tried roasted okra, you might want to take a shot.  Enjoy!

Ingredients
  1. 18 fresh okra pods
  2. 1 tbsp olive oil
  3. salt & pepper to taste
  4. 1 lemon slice
Instructions
  1. Preheat oven at 220 degrees celsius.
  2. Arrange the okra slices on a foil-lined cookie sheet.
  3. Drizzle olive oil to the okra slices.
  4. Sprinkle salt & pepper based on how much salty you like your okra to be.
  5. Bake the okra in the preheated oven for 30 minutes.
  6. Squeeze lemon to the okra.
  7. Serve & enjoy!
